Fee Types displayed in individual quote document

All fee types selected on a product for which a quote is created will display in the quote document.

The name of the fee as displayed in the quote documents, will be the ‘Label used on screen’ (System->Fee Types).

Should you want the fee type to display differently on the quote document, you can change the wording of ‘Label used on screen’ to the desired wording.
